Last Sunday’s food prep included a spiralized zucchini dish, Zoodles, that was so delicious I had to share it with you! Of course, this is about food prep so always take into consideration what you are prepping. Spiralized zucchini will last about 5 days in the fridge, perfect for a weeks worth of food prep.
This recipe is incredibly healthy and nutrient dense, without losing the flavor and comfort of a pasta dish. Trust me, it’s that good! If you have never tried spiralized zucchini, cut this recipe down to a single serving and give it a try. I am listing the ingredients for 2 people for 5 lunches each, a total of 10 servings. Be creative with this, add sautéed ground chicken or tofu. Whatever floats your boat!
Vegetarian Mediterranean Zoodles
- 10 Medium to Large Zucchini, spiralized
- 1 Large Red Onion, diced
- 1 jar of Kalmata Olives, drained
- 2 14oz cans Artichoke Hearts in water, drained
- 1 8.5oz can marinated Sun Dried Tomatoes, drained and diced
- 1 tsp crushed garlic
- 2 Large Lemons, juiced
- Salt and Pepper to taste
- 1 Tbs dried oregano
- Feta Cheese
First, sauté the onion and garlic just until translucent over medium-high heat, about 5 minutes.
Chop the artichokes, olives, and sun-dried tomatoes and add to pan with onion. Simmer for another 5 minutes.
Then add the salt, pepper, oregano, and lemon juice to the pan sauce about one more minute. Remove from heat.
Spiralize all the zucchini. I don’t cook the zucchini because when I microwave it for lunch, the steam cooks it perfectly in about 90 seconds!
Divide the zucchini into 10 dishes and put one scoop of the artichoke mixture on top. Sprinkle with feta cheese. That’s it! So easy and fast.
